If you are like me a one-dish meal is key to surviving the day and getting dinner on the table before bedtime. I especially love meals, like this Easy Pork Apple & Stuffing Casserole that the kids can get involved no matter their age and help out.

Did you know? A friend of mine who is a social worker recently posted that she was at a clients home and the child did not know what an image of flour was on the flash card. I don’t want my kids growing up having no idea where the food they are happily eating came from.
When I had Tucker my mom came over to help me keep the kids entertained and taught me a few quick recipes that could be put together in 15 minutes or less to make life with a newborn a little easier. We made some Spinach Sausage Cappellini (recipe coming soon) and this super easy pork casserole with apples and stuffing. Both of which will find their way into my planner at least once a month!
Easy Pork Apple Stuffing Casserole
Ingredients:
- 2 Large Apples
- 2-3 Pork Chops
- 1-2 packages Pork Stuffing

Directions:
- In a 9×13 pan (or any casserole dish of your choosing) lay your pork chops down in a thin layer.
- Next take your cord, sliced apples and layer over the pork chops
- Finally, add 1-2 packages of uncooked stuffing on top of the apples.
- Cover with aluminum foil and bake at 350° for 30 min. Uncover (check pork for done-ness) and bake for an additional 10 min.

For us I cubed the pork chops before placing in dish to make it easier to serve. Also, it allows the pork to cook more quickly. The family loves this dish, especially when served with homemade mashed baby red potatoes and fresh, local green beans.
This is a dish you’ll want to double for large families or for leftovers. It’s actually better the next day and at the amounts listed about we very rarely have leftovers with our hungry crowd!
