It’s another spin on a classic! My husband wanted taco salad and I was in the mood for something a little lighter. So I ended up with a baby spinach, taco meat, and sweet potato salad. It actually was really good and I’m craving some right now! No need for salt, butter, or even salad dressing.


Just the flavors from the ingredients was enough for me! Plus, instead of typical ground beef my taco meat was made from venison. It’s lower in fat and great for this lifetime challenge of eating healthy!
